Thankful....

I am thankful for....

**answered prayer! I asked Eric on Sunday night to help me pray specifically for energy and motivation to make the right decisions this week as far as prioritizing my time. My reason for asking him to pray was so I would have time to study my SS lesson and have an outline prepared. God has given me extra energy this week to complete things I have needed to. But, most of all, He has shown me times I needed to give to my children. I have to admit, on more than one occasion this week, I have put my bible study aside to play with my girls. I even used my study time yesterday to read a book to E. I know in my heart God will honor this decision. I have put a lot before just being with my girls for awhile now. My lesson isn't finished, but I'm still very excited about it.

**this recipe for Apple Dumplings! I cannot tell you how many times I've made this recipe since I read this post in February ... well, yes I can ... 6! It is beyond delicious and super easy. (But, certainly not lo-cal.) Anything with Mt. Dew is wonderful.

**warm weather! We have had a beautiful day today. Spending time outside today was good for all of us. I read an interesting article recently in Home Life Magazine about the effects of sunlight on our moods. You can read the article here. Our area had been in a severe drought, but I am thankful for a little sunshine!

**good friends! I made dinner last night for some friends. It was so nice to just eat and talk and eat and eat. Oh, I made a really good recipe for corn that my husband got from work. Ladies, this is wonderful - yet, still not lo-cal. (I'll post it at the bottom of this page).

**bedtime prayers! This has become my most favorite part of our day. We all gather in E's room and start with individual prayer requests. O (2 years old) is always first and her prayers crack us up. E follows and then Eric and I both pray individually. I love it and the girls have come to expect it and get very upset if one of us isn't here to participate.

Okay, here's the recipe....

Creamy Cheesy Corn
6 cans of corn (yes .... six!)
2 pkgs cream cheese
10 slices american cheese
4 Tbs. butter or margarine
6 Tbs. water
6 Tbs. sugar (one for each can of corn if you decide to scale this down)

Drain corn and pour into a crock pot. Add butter, water and sugar. Stir. On top of corn add cream cheese. Then, layer slices of american cheese on top. Cook on High until the cheese melts. (I stirred mine after it melted). Then, cook on low for at least 3 more hours. The longer this corn cooks on low, the better. (I also added salt and pepper while cooking.)

The corn recipe sounds yummy - and looking at the ingredients - certainly not low-cal LOL...

No, that recipe definately isn't lowcal - but anything with cheese is right up my ally!
I may have to try this one -- maybe even my girls will eat corn then.

I love your thankful post and these are items that are near and dear to my heart, too. That special family time, time with the kids, outdoor time.. it is aso special and such a blessing.
