I Need A Plan!

If all goes well (fingers crossed!), I actually have a meal plan for this week.  I know that's common for a lot of women, but for me, I can be counted on for maybe 2 good meals a week and then I'm scrambling the rest of the time.  Not because I don't want to cook for my family.  I'm just not that great at planning ahead.

And, I get sick of the same 6 or 7 things I have in rotation :) I'm a simple, simple cook so I need more recipes.  Simple recipes.

Last night, we had a (simple!) chicken pot pie ...

Fresh fruit salad, macaroni and cheese and key lime pie ....
I had never made the key lime pie before.  It was a hit!

Oh, and last night I found a really neat blog called Mommy Hates Cooking. (Ofcourse that title would be intriguing to me).  I'm looking forward to trying some of the recipes.  Plus, she provides an easy way to plan meals and organize ingredients.

I am a fan of 'easy'.

Key Lime Pie

1 9-inch graham cracker pie shell
3 cups sweet condensed milk
1/2 cup sour cream
3/4 cup key lime juice
1 T. lime zest

Preheat oven at 350.  Mix ingredients and add to pie shell.  Bake for 5-8 minutes, until you see small bubbles forming on the top.  Do not brown! Chill completely in refrigerator before serving.

Serve with whipped topping.

See? Simple!

I like to cook but the title of that blog intrigues me too! And that pie looks delicious.

Hey, we bought the stuff to make yarn eggs! Going to try it today with my girls! Thank you for the idea.

You are so funny! I can totally relate to needing things to be simple. Because it is just me, I rarely cook. Dinners for me consist of scrambled eggs, cereal, oatmeal, or sandwiches. Occasionally I'll have a frozen dinner or burritos :) BORING!
Anyway, I am interested in the recipe for the chicken pot pie. Can you post or FB message it to me pretty please :)

Another great cooking blog is Mel's Kitchen Cafe. I've made several recipes and all have been good.

I've been so craving Key Lime Pie! Looks delish!
